200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, to serve 10)

400ml premium vodka

Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Citrus Syrup: Combine all the items in a pan, bring to a light boil, stirring so the sugar melts. Then, turn off the heat and leave to cool entirely. Decant into an sterilised bottle, close it and store in the refrigerator, it will last for about one month.

To make Cocktail Base: Combine all the liquids into a large bottle, leave to sit for an hour, then pass it through preferably using muslin, making it perfectly clear.

For serving: Measure 85ml from the cocktail base to a mixing glass containing ice, and agitate gently for one minute to chill. Strain to a cold coupe glass or equivalent, garnish with the cranberries and complete it by giving it a light spray with the mandarin essence over the top.
